What are your favorites?

For Mother's Day, I knew exactly what I wanted to eat--pocket foods! These are not Hot Pockets (though I mean no disrespect to those who enjoy them), but foods that I think of as pockets, like dumplings and ravioli. These are all my favorites. They're so fun to eat, savory and delightful. How could you not love them?

Some of my favorite pocket foods are from Trader Joes'. They have soup dumplings that I could eat on the daily, they are so good. I also love their ravioli and various sauces. If you haven't had ravioli in pesto, it's something I highly recommend! They have a huge variety of ravioli and I still haven't tried them all yet.

Best Grocery Store Finds This Week

During quarantine, I didn't venture into the grocery store very often. Now that I'm fully vaccinated I still don't go as often as I did pre-Covid, but I've gone early in the morning a couple of times and been surprised at all of the cool things I've found that weren't there pre-Covid. I had no idea there were so many new sugar-free ice creams, or drink flavors, or even new chip varieties!

Let's share some of our favorite finds in terms of grocery shopping. For starters, I'm in love with Rebel ice cream, which tastes awesome as long as you give it time to thaw and get creamy. I'm also excited about Trader Joe's new roasted veggies! I roast broccoli and cauliflower every week and it's not a huge task but it does take some time. These pouches really cut down on the prep work.

Gifts From The Garden Month

What are you enjoying?

Unless you've grown some cold weather crops like lettuce or you've got some fast-growing radishes, odds are you don't have a lot of crops growing just yet. A lot of farms have strawberries ripe for picking, though, which makes them a great part of Gifts From The Garden Month!

We just scheduled a trip to one of our local growers and can't wait to pick some berries. It's been a long time. Our local grower has social distancing rules, including reservations and limited number of guests, and they charge under $3 per pound. There are so many things we hope to make with these fresh berries.

Tomato And Lemon Pasta

Have you tried it?

When I ran across a recipe for sundried tomato and lemon pasta on TikTok, I must admit that it sounded weird to me. Lemon? With tomatoes? But it really looks like it would work well together. @delishaas makes this recipe with shallots, basil, Italian spices, red pepper flakes, lemon zest and juice, heavy cream, tomato paste, and Parmesan cheese.

Here's another recipe that I ran across that looks a little less creamy but just as tasty. I like that the top recipe has all of those greens and red pepper flakes, which are my favorite garnish, but this one looks pretty with its fresh tomatoes, too.

Your Easiest Chicken Dinner

As a teenager, my go-to chicken dinner was a meal I learned from a friend's mom. I dressed raw chicken in a bottle of Italian dressing, threw it in the oven in a dish and baked it. It was very simple and something I could do after school before heading to work, softball or whatever I had every night.

These days my go-to is similar in terms of work: I like to throw chicken in the crockpot with cream cheese and herbs. My family eats it with pasta and I add shirataki noodles to mine, which you can make in 5 minutes. I'll microwave some veggies in a bag, toss on some seasonings (Penzey's sandwich sprinkle is my favorite for vegetables!) and that's my favorite low-work chicken meal.

Hungry Girl has some great recipes to cook in 30 minutes or less that I like to make, but I also want to know what your quickest chicken recipe is. Share it in the chat!

The Weirdest Thing You've Air-Fried

People keep frying weird things in their air fryers and it looks incredibly fun! While my family typically fries the basics--leftovers, chicken, veggies, that sort of thing--we've decided to try air frying something weird every other week for fun and tastiness. This week we're frying a lunchable!

There are all kinds of examples of weird air fried foods on Tiktok, like whole sub sandwiches or even mac and cheese. My air fryer, as I've mentioned before, was an unexpected holiday gift from my parents that turned out to be one of our favorites. My teen uses it almost every day.

Trader Joe's Grilled Cheese Contest

What would you enter?

If you're a Trader Joe's fan like me, you might be excited to hear that the company is sponsoring a fun contest called the Great Grilled Cheese Contest! Using TJ's ingredients, your challenge is to craft a delicious grilled cheese and share it with the world. Winners get a TJ's gift card, their recipes shared on the website and fame!

While my teen is sad to hear that the new Trader Joe's grilled cheese contest is for ages 18+ only, I'm excited to see what recipes are featured from it once entries are submitted. The contest runs through April 18th and people are already sharing their entries on social media, so even if you don't want to enter you can still follow the recipes and cook along with them to try new ideas out. If you're low-carb like me, modify along with me! Grilled cheese is an easy mod if you have keto bread or you have a great low-carb bread recipe at home that you love.

Roasting Veggies in a Bag

Sign me up!

Have you seen these new roasting veggies from PictSweet Farms? They come frozen in a bag and feature all kinds of goodness. The contents, which includes butternut squash chunks, halved Brussels sprouts and onions, is a delectable medley that would go well with any roast. The directions say to roast them in the oven for 20 minutes but I bet it's pretty versatile as far as what you want to do with them.

Adding some bacon would really make these veggies pop. We like to roast things with brown sugar on special occasions for a sweet treat, too. What do you think would go well with this blend?

Fat Snax Crackers

If you're like me and looking for alternatives to carb and sugar-heavy foods, you might be interested in Fat Snax. They make a variety of Keto crackers and cookies that all look interesting. I read some decent reviews and thought I'd try the sea salt crackers.

First of all, if you have ever tried anything low-carb, you already know that it's not going to taste the same as "regular" foods. The lack of white flour really impacts the flavors, and almond flour definitely has a different flavor, as does coconut flour and other alternatives. All of this said, the crackers' flavor itself wasn't bad. They were salty and pretty good when I tried them with a little cheese and again with a bit of butter, both of which are my favorite ways to eat crackers.

They are pretty tiny-maybe a third of the size of a saltine--and I don't know how they would stand up against a hot bowl of soup, which was the third thing I wanted to try. I'm out of my favorite keto soup, though. The texture is... soft. I get what they were trying to go for but that pillowy texture combined with crunch in a regular cracker just isn't there. It's more of a soft break than a crunch.

If you're craving crackers in a pinch, I think they'll do, but for the expense and having to order them special outside my usual grocery order, I don't know if I'd get them often. To be fair, many keto items have to be ordered that way (although I am partial to the keto bread at Aldi). I might try other products, though. They do have 2 net carbs per serving, and 2 servings per bag.

Creative Breakfast Ideas

Breakfast is often the most neglected or boring meal of the day. People like me who take part in intermittent fasting often skip it, but honestly we even make breakfast for dinner a thing in my family. With that in mind, most of us could use some creative ideas for our breakfast meals!

Hungry Girl recently sent out an email with some ideas, from adding pumpkin or nut butter to oatmeal to whipping in some light caramel dip or low-sugar preserves. As someone who doesn't eat oatmeal but loves it, I have to say that sounds really good. For me, it's all about jazzing up the eggs! I love to add different spices to them. One of my favorites is Penzey's Arizona Dreaming spice blend, which I pretty much have to have on my scrambled eggs at this point.
