Easter Menu Planning

What are you cooking up?

Ham is the typical staple food for Easter, and as much as my family loves ham, I'm not a huge fan of the meat. Turkey is my go-to holiday food but it never seems appropriate on Easter, does it? Obviously you can make whatever you like, but eggs are the other common pick for Easter. Whether you like quiche, strata or even a simple scramble, eggs are always a good choice for this holiday.

But how about some Easter lamb with a bacon and bleu cheese salad? Doesn't that just get your mouth watering? Finish off with a strawberry buttermilk sherbert and you're good to go! How about a high tea Easter with blueberry lemon tea, tea sandwiches and of course little finger cakes? I'd make that menu for any special occasion in the springtime.

Honey Garlic Chicken

Oh yes...

Add honey to just about anything and it's better, but garlic? I will eat paper if there's garlic on it.

This honey garlic chicken made in the slow cooker looks absolutely scrumptious. I'm going to try it out tomorrow and start it in the morning while we're out and see how well it goes! I know my guy's going to want some bacon with it so I'm going to fry some of that to add to his, but I think mine will be just perfect.

Bacon-Wrapped Chicken

Plus BBQ sauce!

When you add bacon to anything, you already know it's going to be better--whether it's cardboard or chicken. Jim Gaffigan says it's the only reason people even know there are water chestnuts! This recipe is a decadent, delicious monster that must be enjoyed with company.

You're not going to buy a jar of BBQ sauce, either. To make Bacon Wrapped BBQ Chicken, you will be preparing a homemade sauce with brown sugar and spices, resulting in a much fresher and satisfying "roll." If you hate sushi but love meat, this is the roll for you!

Yummy Mac N Cheese

Panera's Secret Ingredient

Panera Bread claims that the secret to their yummy mac n cheese is none other than Vermont white cheddar cheese. The 950-calorie comfort food is surely delicious for some reason, so maybe it is the quality of the cheese! But other restaurants lay other claims to fame; the famous cracker mac at Salt and Smoke, for example, is topped with Ritz crackers!

Nearly every great mac seems to have its special ingredient. Some might use toppings while others employ heavy cream, special cheeses or even herbs like fresh garlic to create unique flavor combinations to enjoy. No matter which your favorite uses, it's probably designed to create one thing: an addictive meal that you'll return to over and over again!

Food Without Plastic

It's possible, and it's happening

Plastic can help save lives, make things easier and be very convenient, but it's also destroying our environment. If there's a way to avoid using it, we should do so whenever possible, and some stores are proving that it is, in fact, possible. The Dutch grocery store chain Ekoplaza just unleashed an entire aisle in their stores without plastic!

Everything in the store is made with biodegradable and recycleable materials, making it one of the most eco-friendly aisles to ever exist. From cereal to fruit, meat to snacks to beverages, every category of food is represented, proving that we CAN do it without the plastic.

If foods were available without plastic, would you choose them over plastic-encased foods? Do you already implement this decision into your life? Where do you get such items? Share your thoughts in the chat.

Bread-Free Sandwiches

My tween calls them "MCMs"

Lunch meat, cold cuts, deli meat... whatever you call them, they are a staple in most American houses. The thing about lunch meat is that it's usually on bread or a bun, and if you're carb or gluten free, it's not nearly as much fun on its own... or is it?

My daughter has recently started making "MCMs," which are her "meat, cheese, mayo" stacks. She adds whatever veggies, spices or ingredients that she's interested in that day and often warms it in the microwave, too. I have to admit that it's pretty tasty! I like sprinkling this sandwich sprinkle blend on my mayo and topping mine with a TON of shredded lettuce and some cheese. Pickles on the side are a must for me!

What kinds of "sandwiches" do you like minus the bread or gluten? Share your ideas and recipes in the chat.

Garlic and Pesto Dough Balls

A yummy low-carb, gluten-free treat

People who love garlic bread but can't have gluten, lots of carbs or both don't have to give up their favorite treat. They can be made with alternative ingredients that taste almost as good as the real thing. These garlic and pesto dough balls are a fantastic alternative that won't hurt your body so badly.

All you need is some almond flour, butter, Parmesan cheese, an egg, pesto sauce, mozerella and garlic. Each ball only has 1.5 grams of carbs so you can enjoy a couple and share the rest! Garlic and pesto dough balls are great with salads, roasted veggies and other low-carb meals.

Arby's Buys Out Buffalo Wild Wings

Have you heard the news?

Have you heard the news that restaurant chain Arby's bought out Buffalo Wild Wings? Last fall it was announced that the company would make the purchase and it was just finalized this week. The two companies are still going to be considered separate entities, but they are going to be grouped under the new name Inspire Brands, Inc. What this rebranding will mean should be interesting to both Hungry Bloggers who enjoy either food chain as well as those who don't feel inspired by them as they currently stand!

While they will remain separate, the same tactics are expected to be employed between the two companies and customers may notice some similarities during the rebranding efforts of the companies.

What changes do you hope to see between the two companies? Any wishes in terms of flavors, products or ordering options? Tell us in the chat.

Harry Potter Treats

Share your favorite recipes!

If you love Harry Potter, you may want to get into the spirit of Harry Potter night, which is coming up next week! On February 1, schools around the world will be hosting events to celebrate the books and create their own magical creatures. Schools in England are also eligible to compete for prizes, but even if you're not in England you can enjoy this festive evening with friends and family.

One thing to do to make sure you make the most of the celebration is to enjoy a bunch of Harry Potter themed treats! Whether you want to make a meal worthy of Molly Weasley's praise or desserts that you might find on the trolley, it's the perfect time to search through the many online recipes. I'm thinking of making butterbeer cake for our event! I think the kids would really want to drink some butterbeer, too. Don't forget some Bertie Bott's Every-Flavored Beans!

Veggie Curry

How do you make it?

As a curry lover, you can imagine how hard it is to cut the carbs for one of my new year goals! Fortunately for me, I love cauliflower rice and don't mind it as a sub-in, but my family is not a fan. Hence, we sometimes have multiple pots cooking at once. Curry itself doesn't have to be carb-y at all and in fact can be a great meal.

Homemade curry seems to take forever, which makes it tempting to to just buy a jar of curry and go with it. But the women at A Beautiful Mess have created a great veggie curry recipe that only takes 20 minutes to prepare, giving you a fresh meal that is healthy, flavorful and fun. Their recipe is for green curry but you can make other curries with many of the same steps, too. (My favorite is yellow, but red is also very good.)

Do you have a great quick curry recipe to share? Which kind of curry do you like best? Share your tips and ideas in the chat.
