What are your favorites?

Hungry bloggers, how am I just now learning about sheet pan recipes? I've done so much in muffin tins, one-pan recipes and crockpots but I've never made a sheet pan meal! Have you heard of these? Just look at all of the things you can cook on one sheet for a full meal. The tandoori chicken is the one that's calling my name but most of these look sooo good.

The idea behind a sheet pan meal is that it's quick and easy yet healthy. It doesn't take much to prepare and you throw it together to cook on a baking sheet, making it a wonderful alternative to the one-pot dinner since you just toss it in the oven without having to stir and check on it as often. I love that idea!

Many of you have certainly already tried these meals before, so I'd love to hear what you've made. What's the best sheet pan recipe that you go for on a busy night? Share it with me in the chat.

The "New" Butter Cracker Craze

What other "new" food trends have you noticed?

Have you heard that the latest "snack craze" is nothing but... butter on crackers? This is hilarious to those of us who grew up in the 80s and had butter on crackers as a snack on at least a weekly basis, if not more often. I bet today's kids have more real butter on their crackers than the margarine we always had, though, which is probably loads better.

In my house, butter crackers, as they were usually called, were often enjoyed when one of us was sick. I'd also make them for myself when I was very young and alone--if my parents were asleep, for example. Another favorite was cheese on crackers. It's been a while and now I'm craving these nostalgic snacks! I've read that some people even put ketchup on their butter for "poor man's shrimp cocktail," and as a kid who sometimes had ketchup sandwiches, I can see how that might have been a thing!

Weirdest Recipes During Quarantine

What have you come up with?

Lots of people have been using their increased time at home to hone in new hobbies and skills, like cooking. If you haven't, that's okay, too! If you have, what kinds of weird recipes have you dreamt up while at home?

In my house, we've fiddled with adding lots of different fruits to pancakes. I must say that I still prefer blueberry but I really like adding canned pumpkin and would definitely do it again. I think I'd like to try cranberry sauce in them (or waffles) during Thanksgiving! We love to use Thanksgiving leftovers for weird recipes but we didn't have a traditional Thanksgiving last year.

Being my own barista at home has made me most creative with drinks. I've experimented with flavors like Thai tea, malted milk, blue raspberry and many others in my teas and coffees. Sometimes I even just play with them in water! I've also experimented with flavors in chaffles, or waffles made from cheese and eggs, and using radishes or rutabegas in place of potatoes in recipes!

I think my favorite food we made during quarantine was just some baked apples we threw together and made super cinnamon-y and brown sugary. They were SO good and I wish I'd written down what we did!

Arby's Has A Meat Mountain Sandwich

Yep, it's a thing

Have you heard of the Meat Mountain sandwich that's at Arby's? The photo will make you do a double-take! It features almost all of the meats available at Hardee's, from two chicken tenders to ham, roast beef, brisket, steak, corned beef and bacon. Some people might find it gross and others might think it sounds delicious, there's no denying that there are buyer photos of the product that definitely don't match its photos.
 

Pictures are circulating around the Internet right now showing that the product really does have lots of meat, but a user who didn't like the look of his purchase proclaimed, "Arrest everybody" when comparing it to the product picture.

Meat Pies to Warm Your Soul

What kinds do you like?

As cold as it is, I have warm, flaky and delicious meat pies on the brain. Well, I am craving a pot pie, which I haven't had in years, but I'd love to try some meat pies. The closest thing I've had to them is a croquette, which isn't the same thing (is it?), and I'd love to know where to get some good ones--or which recipes are best.

The most experience I have with meat pies is probably watching Sweeney Todd, which is one of my favorite musicals. I do love sausage rolls with buttery, flaky crusts, which I've picked up at our local English tea shop, so maybe they're similar. I've also always wanted to try Shepherd's Pie but I'm not a big onion fan (I know, I know!). 

So how do you make your meat pies? Any great tips?

Keto Fast Food Finds

What are your favorites?

When it comes to grabbing a quick bite via fast food, keto options can be disappointing. Even if you get a bun-free burger that's lettuce-wrapped (which can be just what you're craving!), you might still miss the French fries or even be hungry. I've found a lot of great fast food finds, however, that satisfy and taste good. As someone who does intermittent fasting, a meal that's filling is very important to me!

Fazolis has a new keto flatbread that is incredible (for a keto product)! If you're not used to keto eating you may not be impressed, because you really can't make pizza taste just like regular pizza, but if you miss the garlic goodness of the breadsticks, you do get the flavor in the flatbread. I like to pair it with salad at home for a totally filling meal, but you can get one of their salads, too. My favorite fast food salad is Wendy's caesar, minus the croutons, with the grilled chicken. It's delicious and they have crispy cheese "chips" included.

A Valentine's Feast

What's on your menu?

Special occasions in the time of quarantine warrant special takeout in our house, but my husband picked up a roast a couple of weeks ago on a whim and now I can't stop thinking about that for Valentine's Day. A beautiful roast with blue cheese dressing, some green beans, squash and zucchini all cooked in a brown sugar glaze with an apple crisp for dessert? Oh man. Do I even want takeout now?

Valentine's is one of our cheat days, so I'm super tempted to get something outrageous--maybe order from the bakery while I'm at it. The thing is, our appetites have shrunken a bit, so when I overdo it we're left leaving porch drop-offs of goodies with friends and families. They usually like it, too!

Perpetual Stew

Have you ever taken a stab at it?

The other day I saw a post about a mom who makes perpetual stew. I had no idea people actually made it at home! I always thought it was a restaurant or business venture and not something families wanted. But this mom was very excited to share how she makes it for her house of growing teens.

The mom said the key was to avoid veggies that would not do well in the soup as well as dairy products to keep it working as long as possible without any spoilage. She said they tended to just throw leftovers together or in it, too!

Inauguration Day Foods

Whose having ice cream?

So many people I know are creating actual Inauguration Day menus! It's an exciting day and many people are celebrating, some with cakes and special dinners. I know we're going to have some ice cream in honor of Biden's favorite treat.

This suggested menu includes a few foods symbolic of our new president and VP, from a mango lassi (oh yum, it's been ages since I've had one!) to simple cheeseburgers, really does seem to celebrate the day with lots of favorite foods from both people.

Fun Semi-Fast Food Salads

You've heard of semi-homemade; how about semi-fast food?

One of my favorite ways to sneak in a treat now and then is to incorporate a little bit of fast food into my salads I make at home. Did you know, for example, that a six-piece chicken ring from White Castle is 12 carbs? That's not too bad, and my partner and I will either split it or use the order in our big salad of the day if we're fasting the rest of the time.

I also like to get a bunless burger and load it with veggies and either make it into a salad or eat it with my salad as a side. Be warned: if you use even half an avocado, you may not finish them together. I tend to have that problem! I wish there were a way to save a soggy salad. I also like to find a protein from local Chinese, Indian and Thai restaurants and mix it in or eat it with my salad! This is such a yummy meal. Just check nutrition info on those sauces!
