Celebrate Pride with these goodies

Someone I love is celebrating their first major Pride this year as open to most of their friends and family and I'm so excited to be a part of it. I've been taking them to get rainbow gear, learning about the history of Stonewall and just really enjoying being on this journey with them. We're also planning on some fun foods.

My loved one is not huge on fruity flavors, so we're focusing on mostly rainbow colors rather than flavors. Here is a list of recipes we're starting with for inspiration, but we're also considering making some cute unicorn poop cookies. They have a pride party with friends coming over this weekend so we're trying to finalize plans for recipes by tomorrow to decide what we need.

Summer Cooking Classes

Whether you're on staycation, school is out for the kids or you're looking for a fun date idea, a cooking class might be just what you need. Cooking classes are activities where you can not only have a wonderful time, but learn some practical life skills in the process. There are so many different types to choose from that there's almost something for everyone.

There are cooking classes just for kids, or for parents with their kids, which can be a lot of fun to try. It's a type of learning that's not only fun, but that results in good eating at the end of class! Then there are lunch classes where you learn to make your lunch, then you get to eat it--or even demos where you just watch someone cook and share the meal with the rest of class. There are also fantastic date night cooking classes with the same kind of model, but for couples.

Most cooking classes are themed around a specific type of culinary adventure, like summer eats, Italian fare or even funny finger food. Lots of grocery stores even offer the classes. Have you taken or will you take a cooking class? Which ones do you suggest?

Healthy Snacks For All Ages

Share your favorites

When it comes to healthy eating, every person has different needs and what works well for one won't work for another. That's fine, and whatever your dietary needs are, you can still share your favorite healthy snack and lunch ideas here! Wellness Mama starts us off with trail mix, salmon dip, lettuce wraps sliced veggies and fruit kabobs. 

My current favorite snack is a wedge of cheese with some pickles, but I also love nuts and seeds. I could snack on nuts every day. I also love to make a quick "shake" out of coconut or almond milk, almond butter and cocoa powder. Yummy! Some good old fashioned chopped veggies with homemade ranch or French onion dip will make my day, too, as will half an avocado with some sea salt and olive oil. When my niece is here, I like to fill her two-year-old tummy with raspberries and blueberries, which she loves and could pretty much eat all day.

Best Cauli Substitutes

Which ones do you like?

Yesterday I was reading about this delicious-looking recipe for cauliflower toast and wondering how I might make it work. I often mess up cauli recipes--I just don't ever seem to get all of the water out--so maybe getting cauliflower that's already cut and riced is the answer. It's more expensive, but if the results are that much better it might be worth it.

So far, roasted cauliflower is my best use of the vegetable, and it's pretty much too easy to mess up. But mashed cauli "potatoes" aren't all that difficult, and they still manage to give me trouble. I'd much rather just buy the alread-mashed frozen varieties, but if I could master making them on my own things would be a lot easier. 

So which cauliflower recipes have you found to be the most successful? Which ones would you make as a beginner, or as an alternative to toast?

Discuss Your Way Of Eating

Because there are so many kinds, for so many people

When people get irritated about, or ridicule other people's ways of eating, I can't help but shake my head. We might all be mammals, but we've evolved to a point where we all have different dietary needs. Some people have deathly allergies or sensitivities that can deeply affect their health. In fact, I think more people have sensitivities than not and just don't know it, and if more of us were willing to try modifications we could probably be a lot healthier, even happier, as a result.

Some people avoid certain foods because they cause illness flare-ups, affect their blood sugar or otherwise can cause harm. Others have to eat at certain intervals for optimal health. It's really important to respect everyone's different dietary needs and educate about them. Still more people simply eat things a certain way as a cultural tradition.

All About the Macarons

Whose are the best?

After working every day since... forever, save for days when I'm sick, I always look forward to planning a day off on Mother's Day where I do whatever I want (I also do this in the fall on my birthday). I often read comic books and eat whatever I want that day, and this year is no exception! I've got macarons on my mind this year so I'm looking for some great suggestions. 

I love fresh macarons from bakeries, but I don't do a lot of junk anymore and I'm not sure where I want to get mine. They're also $2 a piece from the bakery, but it's kind of worth it since they're so good and you can just pick five different flavors rather than get a box with flavors you don't like. I thought about getting some at Trader Joe's, which are good and cheap, but I'm torn because I want something REALLY good. I've seen places where I can order online, too, but that's got to be planned in advance.

So how about it, foodies? Where's the best place to get macarons, and which flavor is the best?

Best Salad Dressings

What kind do you like?

As someone who continues to try and eat healthy, I must admit that I get very bored with my salads. It's not even like they're boring in the first place: I chop up and add veggies and cheese, I often toss in some avocado if I have any, I experiment with herbs, spices and dressings, but it still gets awfully boring. So one of the things I try to do is try out new dressings that inspire me.

I ran across this poppy seed dressing and, minus the sugar, I think I might try it on a salad soon. I love poppy seed dressing, and if I replace the strawberries in a salad with some raspberries I can definitely cut the sugar content even more. Creamy salad dressings are my favorites, though, and while I love homemade ranch so much more than store-made ranch, I haven't found many other cream-based homemade dressings that I like as much.

Keto Cereal

Yes, it's a thing!

Friends and family who eat a ketogenic diet often complain about not having any cereal options, and it's a valid complaint. Yes, there are some DIY things you can make on your own, but the worst part about eating low-carb isn't so much finding foods to eat as it is losing the convenience foods that make it easier to eat. That's why it's exciting to find keto cerals like Magic Spoon's low-carb, high protein cereal.

I haven't tried this cereal yet, but it's exciting to see that it's sweet-tasting and comes in four different flavors: Cinnamon, frosted, fruity and cocoa. That covers SO many cereal flavors that I crave and I hope they taste as great as they sound!

Four Levels Of A Hamburger

How do you like (or cook) yours?

Boy do I love a good hamburger. It doesn't even have to be meat; I love a good vegan burger, too! My favorite, though, has to be a medium-well cooked mix of beef and pork or good ground chuck on a flaky bun with bleu cheese. Yum! Pub cheese is great, too, as are any number of toppings, depending on where you're ordering your burger from.

Epicurious has a series of videos depicting various foods prepared by chefs of different levels, from home cooks to professional chefs, and this one shows the different ways that burgers are prepared. I love listening to the different tips offered as well as the differences in how the foods are prepared! Sometimes I think the home cook variation is even better than the chef's; how about you? 

My mom used to make these super thin cheeseburgers and she'd put them on the buns, then slide them back into the bun bag to keep them warm while she cooked more burgers. I love this trick when we make burgers at home! It's so handy when you're cooking for a big crew, especially on a holiday, and it keeps the flies out if you're doing it by the grill.

Dining Underwater

What an amazing experience!

The word amazing is overused so often that I loathe to use it, but in this case I think it's completely necessary. Have you ever heard of eating underwater? Under is a new European restaurant that allows you to go five meters under the sea and dine while you watch real marine life swim by! This Norwegian restaurant is a bucket list item for sure. 

Meals are pricey, but this is a destination resaturant designed to give you a unique experience like no other. The restaurant features an "immersion menu" filled with fresh ingredients and, according to the chef, "naked flavors," as well as wine options. Think minimally prepared seafood.
